Inga Davidian

Entrepreneur and operator with over 15-years in hospitality, brand development, and customer experience.

Owner of Brunello LLC, Davidian conceived and operates two Italian-inspired restaurant concepts in Las Vegas — Brunello and Cantinetta Pizza & Pasta Bar — each designed with a vintage, classic Hollywood glamour aesthetic and a focus on quality, comfort, and memorable dining.

Davidian’s background blends creativity, leadership, and hands-on operations. She oversees every aspect of the business from menu development and guest experience to financial planning, licensing, vendor partnerships, and marketing strategy. She is passionate about building brands that tell a story — with atmosphere, culinary experiences, and service that make guests feel transported.

Prior to venturing into hospitality, Davidian worked in healthcare and fashion design, bringing a unique combination of discipline, precision and artistic vision to the Brunello brands.

The journey has not been easy — but it has made her resilient, resourceful, and deeply committed to creating spaces where people gather, connect, and enjoy good food.

Davidian continues to grow her innovative concepts, strengthening community partnerships, and expanding into new opportunities within the hospitality industry and retail food production.

Chef Roland

Roland is a dedicated entrepreneur, self-made chef, husband, and father whose resilience and determination have defined his life and career. Originally from Seattle, he grew up surrounded by strong cultural values, family traditions, and an early love for the heartfelt warmth of hospitality — experiences that eventually inspired his dream of creating Italian dining concepts rooted in authenticity and soul.

His path to becoming a chef was far from traditional. When a chef unexpectedly walked out of the kitchen early in his career, Roland stepped in out of necessity — and discovered his calling. From that moment on, he learned every skill with his own hands, guided by passion, discipline, and humility. Over the years, he trained under several chefs from Italy who taught him true technique, regional traditions, and the deeper meaning behind Italian cooking. These experiences shaped him into a self-made chef with a unique blend of classical influence and personal creativity.

Together with his wife, Inga, Roland brought his long-held vision to life in Las Vegas, building two restaurant concepts that honor Italian flavors, community, and craftsmanship. He is hands-on in every detail — from menu development to operations — continuously striving to create an experience that feels warm, genuine, and memorable.

More than anything, Roland is a family man. He is a supportive husband, a loving father of four, and a steady, patient presence who leads with loyalty and heart. His journey reflects perseverance through challenges, learning by doing, and building a legacy with integrity and love.

Chef Arturo

​Originally from Mexico, Chef Arturo brings a rich culinary heritage and decades of experience to the Las Vegas dining scene. Known for his celebrated legacy in the city’s vibrant restaurant industry, he has built a distinguished career working primarily within renowned Italian kitchens, where his deep respect for tradition, meticulous technique, and refined palate set him apart.

While Italian cuisine has been an essential foundation of his professional journey, Chef Arturo’s roots in Mexico remain a powerful influence on his craft. His mastery of Mexican cuisine— from regional classics to modern interpretations—adds depth, authenticity, and creative versatility to every menu he touches. Arturo is highly skilled in balancing bold, soulful flavors with the elegance and precision of fine dining, resulting in dishes that are both familiar and elevated.

In 2024, Arturo joined Brunello LLC, where he continues to showcase his talent and leadership. As the Featured Chef at Brunello in Sun City Summerlin, he brings warmth, passion, and culinary excellence to the community. He also collaborates with Chef Roland at Cantinella, contributing his expertise to their acclaimed Brunch service.

Chef Arturo’s unique blend of Mexican culinary artistry and Italian finesse has made him an invaluable member of the Brunello team and a respected figure in the Las Vegas restaurant landscape.
